Mashed potato balls are a great way to use left over mashed potato. Quick and easy, these balls are a great way to get kids to eat their vegies! Lots of variations!!!! Ingredients:
3 cups of mashed potato |
1 small red capsican - diced finely |
2 rashers of bacon - diced finely |
1 small onion - diced finely |
1 egg - beaten |
1/2 teasp italian herbs |
1/2 a cup of bread crumbs to put in and 1/2 a cup to roll balls in |
salt and pepper to taste |
Directions:
1. Dice all ingredients necessary 2. In a bowl combine all ingredients leaving 1/2 a cup of breadcrumbs to roll the balls in. 3. Stir together all ingredients until they are well combined. 4. Roll tablespoonful balls into the palm of your hand to shape, then roll in the remaining breadcrumbs. 5. You can either deep-fry or grill these for a healthier alternative. 6. You can use leftover vegies or other savoury ingredients for variations. Cheese is also a tasty addition. |
