Creamy potatoes are mixed with spinach and then topped with crunchy bread crumbs in this rich side dish your family is sure to love.
Ingredients:
3 large baking potatoes, peeled and cut into cubes
1 package (10 ounces) frozen chopped spinach, thawed
1/2 cup heavy cream
3 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper

1/2 cup italian-style bread crumbs
3 tablespoons grated parmesan cheese
3 tablespoons melted butter
1 teaspoon dried parsley
Directions:
1. Preheat oven to 375°F. Lightly grease a medium casserole dish.
2. Place potatoes in a medium pot. Add enough water to cover; bring to a boil. Cook until tender, about 20 minutes. Drain and transfer to a medium bowl. Mash potatoes in bowl.
3. Gradually add spinach, cream, butter, salt and pepper to bowl; mix until just combined. Transfer potato mixture to prepared dish; smooth top.
4. For topping, in a small bowl, combine bread crumbs, Parmesan and melted butter. Sprinkle topping evenly over potato mixture. Bake until topping is golden, about 15 minutes. Sprinkle parsley over top. Serve immediately.

6. For best results, cook potatoes just until fork tender and drain thoroughly. To mash, use a hand masher, a potato ricer, a food mill, or an electric mixer. Be sure not to overbeat potatoes because they will become thick and pasty.
