2 medium potatoes, peeled and quartered |
1/4 cup sour cream |
2 tablespoons 2% low-fat milk |
2 tablespoons mayonnaise |
1 tablespoon butter |
1/2 teaspoon snipped fresh dill or 1/8 teaspoon dill weed |
1 dash salt |
1 dash pepper |
3/4 cup frozen artichoke heart, thawed and chopped |
1 green onion, chopped |
2 bacon, strips cooked and crumbled |
1/3 cup shredded cheddar cheese |
Directions:
1. Place potatoes in a small saucepan and cover with water. Bring to a. 2. boil. Reduce heat; cover and cook for 10-15 minutes or until tender. 3. Mash potatoes with the sour cream, milk, mayonnaise, butter and. 4. seasonings. Stir in artichokes and onion. 5. Transfer to a 1-qt. baking dish coated with cooking spray. Sprinkle. 6. with bacon and cheese. Bake, uncovered, at 400° for 15-20. 7. minutes or until heated through and cheese is melted. |
