Avoiding carbs? This is a great substitute for mashed potatoes. And it tastes exactly like mashed potatoes! Ingredients:
1 head cauliflower or 1 lb bag of frozen cauliflower |
1 cup chicken broth or water |
2 t butter (if you are dairy intolerant, you can substitute goat butter or dairy free alternative) |
salt and pepper to taste |
Directions:
1. Break cauliflower into florets, and put in saucepan with broth or water. Cook on medium-low until very tender. Add a little bit more liquid if it looks like it will boil dry. 2. Drain off almost all the liquid, and set it aside. 3. Put the cauliflower into a food processor and process until very smooth. OR you can blend it with a stick blender, but it won't have quite the same texture. 4. Pulse in butter, salt and pepper, and if it's too thick, add a bit of the broth/water to desired consistency. |
