Mashed Cauli-Cheese Casserole |

Excellent low-carb side dish with the creamy goodness of mashed cauliflower and sharp cheddar. Ingredients:
1 head cauliflower, cut into florets |
2 ounces cream cheese |
2 tablespoons butter |
1/2 cup whole milk |
2 cups sharp cheddar cheese, shredded, divided |
Directions:
1. Preheat oven to 350 degrees F. 2. Trim cauliflower into florets and cook in boiling water until very tender, about 10 minutes. Drain. 3. Place cauliflower in a large bowl, adding cream cheese, butter, and milk. Blend with stick blender until smooth and creamy. 4. Stir in 1-1/2 cups shredded Cheddar until almost melted. 5. Place in 2-quart casserole dish coated with no-stick spray. 6. Bake for 20-25 minutes, or until golden on top. 7. Remove from oven and sprinkle remaining 1/2 cup cheese on top. 8. Return to oven and bake 5 minutes more, or until cheese is melted. |
