This is a nice casserole to change things up once in a while! Recipe from a 1988 Church cookbook.
Ingredients:
2 1lbs. carrots
2 tbsp. butter
1 chopped green pepper
1 chopped medium onion
8 oz. shredded extra sharp cheddar cheese
1/4 cup panko bread crumbs
1/4 tsp. sea salt
1/4 tsp. cracked pepper
Directions:
1. Cook carrots, drain and mash.
2. Add butter, onion and cheese.
3. Place carrot mixture into a casserole.
4. Stir in green pepper.
5. Sprinkle with panko bread crumbs, salt and pepper.
6. Bake at 350 for 35 minutes.
