Mascarpone And Berry Parfaits |

I just love cheese and if I can fit it into dessert, I'm going to. From Bon Appetit Ingredients:
1 cup strawberries chopped |
4 whole strawberries |
2/3 cup plus 12 raspberries |
2 tbls. sugar |
2 8oz. containers mascarpone cheese |
*an easy substitute for mascarpone is 12 oz. of cream cheese, 6 tbls. water, and 1/4 cup sour cream...blend well |
Directions:
1. In food processor, add chopped strawberries, 2/3 cup raspberries, and sugar
2. Blend until smooth puree
3. Drop 1 whole strawberry into each of 4 champagne flutes or wineglasses.
4. Top with 2 tbls. mascarpone, then 2 tbls. fruit puree
5. Repeat layering 2 more times
6. Top off with mascarpone and add 3 raspberries for garnish
7. Chill at least 1 hour
