Paprika-seasoned chicken breasts are served on a bed of baby spinach, sauteed apples, celery and shallots, then topped with warmed MarzettiĀ® Ultimate Blue Cheese Dressing and toasted pine nuts. Ingredients:
3/4 cup marzettiĀ® ultimate blue cheese dressing |
4 (6 ounce) boneless skinless chicken breasts |
salt and black pepper |
1/2 teaspoon paprika |
3 tablespoons olive oil, divided |
1 large granny smith apple, cored and sliced |
1 cup sliced celery |
1/3 cup sliced shallots or red onions |
8 ounces clean baby spinach leaves |
1/4 cup toasted pine nuts |
Directions:
1. Season chicken with salt, pepper and paprika. Heat 2 tbsp oil in a skillet over medium high heat and sear both sides of chicken. Continue to cook medium heat until chicken is thoroughly cooked. Transfer to a plate and keep warm. In same skillet, heat remaining oil and saute apples, celery and shallots until tender. 2. Gently heat Marzetti Ultimate Blue Cheese Dressings in a saucepan; do not bring to a boil. Arrange spinach on plates, top with hot vegetables, apples and chicken. Spoon warm Marzetti Ultimate Blue Cheese Dressing over all and sprinkle with pine nuts. Serve. |
