We used to pick currants in the mountains every year so we always have alot of currant jelly on hand - if you don't you can sub grape jelly but trust me these meatballs aren't as good. Ingredients:
1 1/2 lbs ground beef |
1 ounce dry onion soup mix |
1/2 cup soft breadcrumbs |
1/4 cup milk |
1 egg, beaten |
1 tablespoon soy sauce |
1 cup water |
1/2 cup red currant jelly |
1 tablespoon vinegar |
1/2 teaspoon grated orange peel |
1/8 teaspoon grd ginger |
Directions:
1. Preheat oven to 375 degrees. 2. In a large bowl mix together ground beef, 2 tbsp onion soup mix, bread crumbs, milk, egg and soy sauce. 3. Shape into 36 1 balls. Arrange 1/2 apart in 2 shallow baking pans. Bake 15 minutes or until brown. Pour off fat. 4. In a 10 inch skillet combine remaining ingredients cooking over medium heat until boiling. Reduce heat to low and add meatballs. 5. Simmer 10 minutes. Serve over rice. |
