Ingredients:
3 tablespoon(s) olive oil
2 whole(s) sweet onions chopped
1 whole(s) green pepper chopped
1 whole(s) red pepper chopped
1 wheel(s) yellow pepper chopped
4 tablespoon(s) garlic chopped
1 pound(s) chicken thighs cubed
1 pound(s) andoue' sausage sliced
4 bottle(s) lite beer
3 cup(s) rice
3 tablespoon(s) cajun seasoning
Directions:
1. In a large skillet saute' onions, peppers and garlic in olive oil until transluscent. Add chicken and sausuage and sprinkle cajun seasoning over everything. Cook until chicken and sausage are done. Add beer and rice. Bring to a boil. Cover and simmer on medium for approximately 45 minutes.
