THIS CAKE IS OUTSTANDING! YOU CAN'T TELL IT IS COCONUT, SO THE FOLKS WHO DON'T LIKE COCONUT WILL NOT EVEN KNOW IT! ONE OF MY MAMA'S FAVORITES!
Ingredients:
4 eggs
1 cup buttermilk
2 1/2 cups sugar
2 cups of self rising flour
1 cup oil
1 large can or half bag of coconut
1 1/2 teaspoon of coconut flavor
do not use a mixer. mix by hand
Directions:
1. BATTER REMINDER: DO NOT USE A MIXER. MIX BY HAND
2. BEAT EGGS AND THEN GRADUALLY ADD SUGAR. MIX WELL
3. ADD MILK, MIX WELL
4. ADD OIL, MIX WELL
5. ADD FLOUR A LITTLE AT A TIME AND MIX WELL
6. ADD COCONUT FLAVOR AND COCONUT, MIX WELL
7. MAKE SURE ALL INGREDIENTS ARE MIXED REALLY WELL.
8. POUR INTO A GREASED BUNDT PAN.
9. BAKE AT 350 DEGREES FOR 45 MINUTES
10. ICING:
11. 1/2 CUP WATER
12. 1 CUP SUGAR
13. 1 TEASPOON OF COCONUT FLAVOR
14. BRING TO A BOIL, BOIL FOR ONE MINUTE. SPOON OVER CAKE WHEN DONE
