These are great!! Ingredients:
1 1/2 cups sugar |
1 1/2 cups shortening |
2 eggs |
2 teaspoons vanilla |
2 cups carrots, cooked and mashed |
4 cups flour |
1 teaspoon salt |
4 teaspoons baking powder |
1 cup shredded coconut |
2 cups powdered sugar |
2 tablespoons butter |
1 tablespoon grated orange rind |
2 tablespoons orange juice |
Directions:
1. Cream sugar and shortening; add eggs, vanilla and carrots; mix well. 2. Put all dry ingredients in a seperate bowl - mix together and add to wet mixture slowly. 3. Stir in coconut. 4. Bake at 375 degrees for 10 minutes. 5. Whip together the icing ingredients and frost when cooled. |
