Ingredients:
2 eggs, separated |
1 cup firmly packed brown sugar |
1 cup all-purpose flour |
1/4 teaspoon baking powder |
1/4 teaspoon baking soda |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 teaspoon ground cinnamon |
1/2 teaspoon ground cloves |
1 cup raisins |
1 cup chopped walnuts |
Directions:
1. Beat egg whites (at room temperature) in a large mixing bowl until stiff peaks form. Beat egg yolks in a small mixing bowl until thick and lemon colored. Pour yolks into beaten egg whites, beating until thoroughly blended. Gradually add sugar, 2 tablespoons at a time, beating well. 2. Sift together flour, baking powder, soda, salt, pepper, cinnamon, and cloves in a medium mixing bowl. Gradually add to egg mixture. Add raisins and walnuts, stirring well. 3. Drop dough by heaping teaspoonfuls 2 inches apart onto lightly greased cookie sheets. Bake at 375° for 6 to 8 minutes. Cool slightly on cookie sheets. Remove from cookie sheets, and cool completely on wire racks. |
