My brother got this recipe from his best friend's mother when he was a teenager, passed it on to me when I was in my 20s, and it has been a favourite ever since. Even my kids like it, if I omit the peppers. Ingredients:
3 slices bacon, chopped |
1/4 cup chopped onion |
3/4 cup green pepper, chopped (optional) |
1 garlic clove, minced |
3 1/2 cups chopped tomatoes |
1 cup chicken broth |
1/2 cup white wine (optional) |
1/2 teaspoon salt |
1/2 teaspoon basil |
1/2 teaspoon thyme |
1/2 teaspoon paprika |
1/2 teaspoon tabasco sauce |
1/2 teaspoon marjoram |
2 cups meat (eg shrimp, chicken, ham, sausage etc) or 2 cups seafood (eg shrimp, chicken, ham, sausage etc) |
1 cup uncooked rice |
Directions:
1. saute bacon, onions, peppers and garlic until tender. Add tomatoes. Add chicken broth, wine and seasonings. Bring to a boil and add rice. Reduce to a simmer - stirring occasionally and checking the liquid level, adjusting if necessary. When rice is cooked, add meat and/or seafood and heat through quickly. |
