Mary Mac's Tea Room has been an Atlanta Landmark for years. This recipe was in the Atlanta Journal Constitution, June 29, 1988 Ingredients:
pastry |
1/2 cup lard or shortening |
1 1/2 cups all purpose flour |
1 teaspoon salt |
1 tablespoon sugar |
1/2 cup ice water |
peach filling |
2 pounds fresh ripe peaches, peeled & sliced |
1/2 cup sugar |
butter |
Directions:
1. Prepare pastry by combining 1/2 cup of the flour with lard of shortening. 2. Rub together to incorporate 3. Add salt and sugar to remaining flour and work into lard mixture with a tablespoon ice and water until mixture is soft but not wet. 4. Dust hands with flour to handle dough. 5. Chill 6. Mix peaches with sugar and let rest for juices to draw out of peaches. 7. Preheat oven to 350 degrees 8. Roll out pastry until it is large enough to fit the top of a 12-inch long baking dish. 9. About 40 minutes 14. Makes 8 - 10 servings (sounds like 1 to me!!) 15. ****************************************************** 16. -Don't forget to love yourself- Soren Kierkegaard 17. ****************************************************** |
