Moist, good-for-you I have made it for every conceivable event, and allways end up giving out the recipe. I figure that is a success. ( : Ingredients:
1/2 c finely chopped pecans |
3/4 tsp baking soda |
1 tsp baking powder |
1 tsp cinnamon |
1/2 tsp salt |
3/4 c veg. oil |
1 c white sugar |
2 eggs |
1 c flour |
1 c grated raw carrot (1 large) |
1/2 c drained crushed pineapple |
1/2 c raisins |
icing: cream cheese, butter, some pineapple juice, squeeze of lemon juice and icing sugar. |
Directions:
1. Preheat oven to 350. 2. Sift soda, baking powder, cinnamon, salt over pecans. Mix well. 3. Add oil, sugar, eggs. Mix well. 4. Add grated carrot, pineapple and raisins. Mix well. 5. Pour into well-buttered 9 square pan. (I use parchment paper). 6. Bake 40 minutes or done to toothpick test. 7. Moist enough that it needs no icing, but: 8. Icing as shown above is heaven. |
