Being from NM, I have many recipes for salsa. This one comes from a Mom and Pop Mexican restaurant we have been going to for about 30 years. I wheedled the ingredients from the owners and this is the best I could come up with You may increase or decrease the ingred. Read more . to your own taste. We like it hot, so I use more jalapenos. You can make this anytime with stuff on hand. Ingredients:
2 pickled, stemmed and seeded |
jalapenos and a little juice from the jalapenos |
1/2 c. chopped onion |
1 clove garlic, chopped |
1/2 c. chopped, fresh cilantro (a must) |
1 14 oz. can peeled tomatoes w/juice, chopped fine |
salt and pepper to taste |
Directions:
1. Chop the first four ingredients together, then add the tomatoes and chop. I find that if I chop everything together in the Cuisinart, it gets foamy. 2. All our markets here have fresh cilantro, but if you are located where there isn't a large Spanish population, or Mexican markets, try Oriental markets....they will have it. |
