1 cup quick oatmeal |
1 1/2 cups boiling water |
1/2 cup unsalted butter |
1 cup brown sugar, packed |
1 1/2 cups granulated sugar |
2 eggs, beaten |
1 cup flour, sifted |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1 teaspoon vanilla |
1/2 cup walnuts, chopped |
Directions:
1. Preheat oven to 350°F. 2. Combine oatmeal and boiling water. Let stand for 15-20 minutes. 3. Combine butter and sugars until light and creamy. Add eggs and continue beating. Stir in cooled oatmeal mixture. Sift together flour, baking soda and spices. Gradually add dry ingredients to batter. Mix well. Add vanilla. Fold in walnuts. 4. Pour into a greased and floured 9-x-13-inch pan. Bake 45-55 minutes or until cake tests done. Can be served warm or cool. |
