This is how my lovely son often cooks boiled potatoes. They are wonderful.
Ingredients:
as many potatoes as you think appropriate, washed but not peeled.
salt and pepper
olive oil
mixed herbs of your choice, dried or fresh
Directions:
1. Cut the potatoes as you would for ordinary boiled.
2. Cook in salted water until done
3. Drain and return to pan
4. Drizzle with olive oil and fry in the saucepan until browning.
5. If using dried herbs, add along with the olive oil
6. If using fresh herbs, add when the potatoes start to brown.
7. Martin sometimes adds other bits and bobs to this recipe - cooked Brussel Sprouts, chopped garlic, onions.....add these at the 'frying stage.
8. Chopped bacon works too.
