Marthas Quick Potato Salad |

I worked with a wonderful Resource Helping Teacher, a true southern lady from Texas named Martha. She and I did a lot of cooking together for school occasions. She made a quick potato salad that was unbelievable and quick. Read more . I put my own little twist on it so hope you like it! Ingredients:
6 cups instant mashed potatoes(make according to package directions) |
1/2 cup chopped celery |
1/2 cup chopped red onion |
1/2 cup chopped dill pickles(you can use sweet if preferred) |
1/2 cup chopped green onions |
1/3 cup chopped green olives plus 1/4 cup of the juice from the olives |
1 cup mayonnaise |
1 tablespoon yellow mustard or brown mustard |
1/2 cup sour cream |
dash of creole seasoning |
pepper and salt to taste |
*2 hard boiled eggs, chopped(optional) |
Directions:
1. Make potatoes according to package directions. 2. Place all ingredients in large mixing bowl and stir well. 3. Refrigerate until ready to use. 4. Now save the time you would have used peeling and boiling potatoes for more important things like sipping on your favorite drink and test tasting! |
