Marshmallow Sweet Potatoes |

Holiday favorite! so great we fight over it every year! Ingredients:
2 1/2 lbs sweet potatoes |
4 tablespoons butter |
1/4 cup maple syrup |
2 tablespoons brown sugar |
1/3 cup pecan halves |
1 1/2 cups mini marshmallows |
Directions:
1. spray 8x8 baking dish with nonstick cooking spray. 2. in a 3 qt saucepan,place sweet potatoes and water to cover; heat to boiling. 3. reduce heat, cover and simmer 25-30 mins or until tender. 4. drain potatoes and cool slightly. 5. peel and cut into large chunks, place in prepared 8x8 dish. 6. preheat oven to 350. 7. in a small saucepan melt butter, stir in syrup and sugar over low heat stirring 3-5 mins until blended. 8. sprinkle nuts over sweet potatoes then top with syrup mixture. 9. bake 25 minutes. 10. top with marshmallows. 11. bake 5-7 minutes. |
