Sorry Erin, I wanted to know the calories of my version. Ingredients:
1 lb lean ground turkey |
1 (1 1/4 ounce) package ortega taco seasoning |
1/2 cup onion, chopped |
2 (10 ounce) cans enchilada sauce |
1 (16 ounce) jar salsa, pace chunky mild |
1 (15 1/4 ounce) can corn |
1 (15 1/4 ounce) can black beans |
2 cups cottage cheese |
2 eggs |
8 spinach tortillas |
2 cups mexican cheese, shredded |
Directions:
1. Preheat oven to 350°F. 2. Brown turkey. 3. Add seasoning packet, onion, enchilada sauce, salsa, corn and black beans. 4. Simmer for 5-7 minutes. 5. Combine cottage cheese and eggs. 6. Spray 9 x 13 pan with cooking spray. 7. Assemble lasagna in following order 1/3 meat mixture, enough tortillas to cover layer (will have to be ripped to fit), 1/3 cottage cheese mixture, 1/3 cheese, repeat. 8. Bake at 350°F for 25 minutes. 9. Let stand for 10 minutes before serving. |
