Marsha's Chicken and Dumplings |

Excellent use for leftover roast turkey and chicken. Ingredients:
4 cups of cubed cooked chicken |
2 (16 ounce) cans chicken broth |
4 cups water |
2 cups uncooked carrots |
1/2 cup chopped celery |
2 teaspoons onion powder or 2 teaspoons chopped onions |
1 tablespoon basil |
1 tablespoon oregano |
1 tablespoon parsley |
1 teaspoon thyme |
1 (16 ounce) can peas |
2 tablespoons butter |
2 tablespoons flour |
16 dumplings |
Directions:
1. In dutch oven combine the first ten ingredients. 2. Heat to a boil then reduce to simmer. 3. Simmer until carrots are tender, about one hour. 4. Add peas. 5. In small sauce pan make rue with butter and flour. 6. Add rue to chicken mix. 7. Add and cook dumplings according to directions. 8. I recommend Dumplings for the dumplings. 9. Eat! |
