This creamy dessert is a perfect finish to any meal. Tooooo good! Recipe and photo from the Italian Cookbook Ingredients:
4 oz. amaretti cookies, crushed |
4 tbl amaretto or maraschino juice |
4 eggs, separated |
generous 1/4 c sugar |
1 c marscapone cheese |
toasted slivered almonds for garnish |
Directions:
1. Place amaretti crumbs in a bowl, add the amaraetto or maraschino and set aside to soak 2. Meanwhile, beat the egg yolks with the sugar until pale and thick 3. Fold in the soaked cookie crumbs 4. Whisk the egg whites in a spotlessly clean, bowl until stiff, then gently fold in the cheese mixture 5. Divide the marscapone cream between 4 serving dishes and chill for 1 to 2 hours 6. Sprinkle with toasted slivered almonds just before serving |
