Marrow Bones With Red Wine Sauce |

Marrow bones, roasted in the oven with fresh herbs, topped with a red wine sauce and served with toasted bread. A delicious starter and also goes great with grilled steak. Ingredients:
5 kg marrow bones |
30 ml (2 tablespoons) fresh parsley, chopped |
30 ml (2 tablespoons) fresh rosemary, chopped |
30 ml (2 tablespoons) fresh thyme, chopped |
salt and ground black pepper to taste |
red wine sauce |
3 onions, finely chopped |
15 ml (1 tablespoon) butter |
15 ml (1 tablespoon) olive oil |
1-liter beef stock |
3 bay leaves |
15 ml (1 tablespoon) mixed fresh herbs |
500 ml (2 cups) red wine |
20 ml (4 teaspoons) hoi sin sauce |
Directions:
1. Preheat the oven to 180 ÂșC 2. Make the red wine sauce. 3. Cook the onions in the butter and oil until golden brown. 4. Add the rest of the ingredients and simmer the sauce until it is reduced by half. 5. Strain the sauce and keep warm. 6. Place the marrow bones in a roasting tray and scatter with the herbs. 7. Season with salt and ground black pepper. 8. Bake in the oven for about 30 minutes. 9. Serve the marrow bones with some red wine sauce spooned over and garnish with fresh herbs. 10. Serve with toasted bread on the side. |
