The sweetness of the carrots combine well with the citrus orange flavours. Can do ahead and reheat in the microwave also. Ingredients:
4 cups carrots, thinly sliced |
1/3 cup orange juice |
1/2 teaspoon ginger, chopped |
1/3 cup orange marmalade |
1 tablespoon margarine |
snipped parsley, if desired (to garnish) |
Directions:
1. Combine carrots, orange juice, ginger and marmalade in 1 1/2 quart casserole Dot with butter. 2. Bake uncovered 350F 30 minutes or until carrots are tender. |
