1. Season both fillets with Cajun seasoning. 2. Salt and pepper fish. 3. Heat oil to hot in medium skillet (just starting to smoke). 4. Slide in fish. 5. Cook 2-3 minutes. 6. Turn and cook 2-3 more minutes. 7. Garnish with lemon wedge. 8. Serve with tortilla chips and chunky tomato salsa.
