Marla's Marvelous Mushroom Muffins |

A dear friend (Marla) made these many years ago while we both worked in a group home. We lost contact for many years, yet my desire for these amazing muffins continued. Using the internet, I was able to find Marla again and she agreed to share the recipe with me. Here it is for all to enjoy. Ingredients:
3 tablespoons butter |
1/2 lb of finely chopped mushroom (about 3 cups sliced) |
1 cup whole wheat flour |
1 cup all-purpose flour |
1 tablespoon baking powder |
2 teaspoons sugar |
1/2 teaspoon salt |
1 cup grated old cheddar cheese |
3/4 cup milk |
2 eggs |
Directions:
1. Saute mushrooms in butter until no moisture left. 2. Sift dry ingredients into a mixing bowl. 3. Add grated cheese and toss until coated. 4. Beat eggs and milk together. 5. Add to dry ingredients with mushrooms. 6. Mix until well blended. 7. Using either muffin cup liners or grease and dust muffin pan. 8. 375 degrees. |
