I have adapted this recipe that my sister gave me that she modified from another recipe that she had been given. It's a great all-in-one-dish for the family or friends. Served with a really yummy salad it's a great meal. Ingredients:
1 1/2 lbs. boneless, skinless chicken breast (or turkey), cubed |
1 box (10 oz.) of stuffing mix |
1 bag (16 oz.) frozen chopped broccoli |
1 can cream of chicken soup |
1/2 cup mayonnaise |
1/2 cup sour cream |
1/2 cup grated parmesan cheese |
1 medium onion, chopped |
4 stalks celery, chopped |
1 1/2 cups chicken stock |
Directions:
1. In a skillet, cook chicken in a little olive oil until juices no longer run pink. Set aside. In a large bowl, combine stuffing mix, onion, celery and chicken stock. Set aside. Back to the skillet of chicken…mix in the condensed soup, mayonnaise, sour cream and parmesan cheese. In a casserole dish sprayed with cooking spray, layer stuffing mixture, chicken mixture, broccoli and then a last layer of stuffing mixture. Bake at 350 for about 40 minutes. I have also layered this all in a crock pot and cooked for 8 hours. 2. Note: I usually use non-fat or low-fat products in this dish when I make it and one would be pressed to find fault with it. |
