Ingredients:
1/3 cup champagne vinegar
1 tablespoon lemon juice
1 tablespoon dijon mustard
1 tablespoon honey
1 shallot, finely chopped
2 garlic cloves, finely chopped
2/3 cup grape-seed oil
sea salt and freshly ground black pepper to taste
Directions:
1. 1. Combine the first 6 ingredients in a mixing bowl. Let stand for 30 minutes.
2. 2. Slowly add the grape-seed oil to the mixture in a steady stream while whisking vigorously.
3. 3. Season with the salt and pepper.
4. Note: If you're short on time, you can substitute baby carrots and ranch dressing for the salad.
