Marinated Walla Walla Sweet and Red Onion Rings |

This is from an old booklet put out by the Walla Walla Gardeners Association. Walla Walla is in SW Washington state. Ingredients:
1 cup white vinegar |
1 cup water |
1/3 cup sugar |
1 cinnamon stick |
1/2 teaspoon salt |
1/2 teaspoon whole cloves |
1/4 teaspoon ground allspice |
1 medium walla walla onion, peeled and sliced |
1 medium red onion, peeled and sliced |
Directions:
1. Put all ingredients except onions in a saucepan (non-aluminium), cover and simmer for 10 minutes. 2. Separate onions into rings. Place in an oblong baking pan (glass or non-aluminium) or large casserole. 3. Pour hot liquid over onions. Cover and chill at least 4 hours. 4. Drain and serve. |
