A marinated melody of vegetables. You can, of course, mix these up to your preference or what's in season. It's important to let the flavors meld for several hours before serving, so making it the day before is perfect. Read more . Just stir well before serving!
Ingredients:
vegetable recommendations for a total of about 6 cups bite sized veggies
cauliflower
broccoli
celery
carrots(i use baby)
bell peppers
cucumber
peas--frozen is okay, but don't cook them, just thaw them
sugar peas
kernel corn(not canned--fresh blanched off the cob or frozen, thawed)
*dressing/marinade
1/3 cup mayonnaise
1/2 cup sour cream
1/4 cup tomato based salad dressing(ie french, catalina, bacon/tomato, etc)
1 green onion, sliced
splash of balsamic vinegar
salt and fresh ground pepper
Directions:
1. Combine all dressing ingredients in large enough bowl to hold all veggies.
2. Add veggies and toss to coat.
3. Refrigerate several hours or overnight.
4. Stir well before serving
