Marinated Vegetable Salad With Smoked Turkey |

Collected over a dozen years ago for salads for camping Ingredients:
2 cups small cauliflower florets (1/2 pound) |
1 cup green beans, cut into 1-inch pieces |
1 carrot, sliced |
1 (14 ounce) can artichoke hearts, rinsed and drained |
1/4 cup diced red onion |
2 celery ribs, sliced |
1/4 lb smoked turkey breast, diced |
3/4 cup chicken broth |
1/2 cup fresh lemon juice |
1 tablespoon extra-virgin olive oil |
4 garlic cloves, chopped |
1 1/2 teaspoons oregano |
salt and pepper |
Directions:
1. Blanch the cauliflower, beans and carrot for 45 seconds. Plunge into cold water to stop the cooking and drain. Whisk the dressing ingredients together. Put all the vegetables (blanched and raw) and meat in a tupperware, pour dressing over, mix and bag in double ziplocs. |
