Marinated Vegetable Salad |

This recipe came from my Aunt's family cookbook. (Barnes-Woodrum). It goes well with so many different meats. Ingredients:
1 can shoe peg corn |
1 can english peas |
1 can cut green beans |
1/2 cup celery, chopped |
1/2 cup red onion, chopped |
1 bell pepper, chopped |
1/2 cup salad oil |
3/4 cup sugar |
1 teaspoon salt |
1 teaspoon pepper |
1/2 apple cider vinegar |
Directions:
1. Drain canned vegetables and mix with celery, onion, and bell pepper. 2. Mix vinegar, oil, sugar, salt, and pepper. 3. Bring to a boil and pour over vegetables. 4. Refrigerate overnight. |
