Marinated Vegetable Salad |

This is a great salad to make the night before a church potluck. One of the best of this kind I have ever had. Hope you and your family love it as much a we do. Ingredients:
3/4 cup vinegar (i use cider because i like the flavor better) |
1/2 cup vegetable oil |
1 tsp. salt |
1/2 cup sugar |
1 tablespoon water |
1 tesp. pepper |
1 (16 oz) can french green beans, drained |
1 (16 oz) can english peas, drained |
1 (12 oz) can shoe peg whole kernel corn, drained |
1 (2 oz) jar chopped pimentos, drained |
1 cup celery chopped |
1 green pepper, chopped |
1 bunch green onions, chopped |
Directions:
1. Combine vinegar, oil, salt, sugar, water and pepper in a medium saucepan and bring to boil, stirring to disolve sugar. 2. Cool. 3. Combine green beans, peas, corn, pimentos, celery, green pepper and oinon and stir in vinegar mixture. 4. Cover and refrigerate for 12 hours or overnight. 5. Stir occasionally. 6. Serve well chilled. |
