Marinated Tomatoes, Onions & Mushrooms |

A summertime staple! With an abundance of tomatoes this time of year, I tend to make this side dish often. I could also eat it as a snack!! Ingredients:
5 large tomatoes, cut into wedges |
1 medium red onion, sliced thin |
1 1/2 cups fresh mushrooms, sliced thin |
1 1/2 tablespoons dried parsley, crushed |
1 tablespoon sugar |
1 1/2 teaspoons garlic salt |
1 1/2 teaspoons lawry's seasoned salt |
1/2 teaspoon black pepper |
1/2 teaspoon thyme |
3/4 cup vegetable oil |
1/2 cup red wine vinegar |
Directions:
1. Cut/slice vegetables and set aside in a large ziploc bag. 2. Combine all other ingredients in a bowl and whisk vigorously. 3. Poor the marinade over the vegetables in the bag. Zip tight. 4. Marinate as little as 3 hours, or as long as overnight. 5. Turn the bag occasionally. |
