For a variation add sliced Bermuda onion and fresh mushrooms to tomatoes Ingredients:
2-3 large ripe tomatoes |
1/2 cup extra virgin olive oil |
2 tbsp cider vinegar |
1 tsp basil |
1 tsp oregano |
1 tsp cilantro |
1 tbsp flat leaf parsley (finely chopped) |
1 clove minced garlic |
1 tbsp finely chopped onion |
1 tsp salt |
6 turns of pepper mill |
Directions:
1. Wash tomatoes, pat dry. Chop tomatoes into pieces place in a bowl. 2. Add remaining ingredients to bowl and mix. 3. Refrigrate at least 1 hour. Garnish with Parsley. |
