Ingredients:
4 large red or yellow tomatoes, each cut into 4 slices |
1/4 cup lemon juice |
2 tablespoons minced red onion |
2 tablespoons red wine vinegar |
1 tablespoon chopped fresh basil or 1 teaspoon dried basil |
1/4 teaspoon freshly ground black pepper |
1 garlic clove, minced |
green leaf lettuce leaves (optional) |
Directions:
1. Arrange tomato slices in a large shallow dish. Combine lemon juice and next 5 ingredients; pour over tomato slices, turning to coat. Cover and marinate in refrigerator at least 2 hours. 2. Arrange tomato slices evenly on 8 lettuce-lined salad plates, if desired. Spoon marinade evenly over tomato slices. |
