                    These are the talk of a meal,no matter what you serve.  Ingredients: 
                    
                        
                                                5 to 6 medium frsh tomatoes,sliced  |  
                                                1/4 lb. fresh mushrooms,sliced  |  
                                                3/4 c canola oil  |  
                                                1/4 c red wine vinegar  |  
                                                3 garlic cloves,minced  |  
                                                1 tbs fresh minced parsley  |  
                                                1/2 tsp salt  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. In large shallow dish,layer the tomatoes and the mushrooms. In a bowl,whisk the oil,vinegar,garlic,parsley and salt. Pour over vegetables. Cover and refrigerate at least 4 hours,turning occasionally. Serve with slotted spoon.                              |
