Try this when tomatoes are fresh from the garden Ingredients:
8 medium tomatoes, slices |
1/4 cup fresh minced parsley |
1/4 cup olive oil |
2 tablespoons cider vinegar or 2 tablespoons red wine vinegar |
2 teaspoons prepared mustard |
1 clove garlic, minced |
1 teaspoon sugar |
1 teaspoon salt |
Directions:
1. Arrange tomatoes in serving bowl; sprinkle with parsley. 2. Combine remaining ingredients in a jar with tight fitting lid and shake well. 3. Pour over tomatoes. 4. Cover and refrigerate for 30 mins. |
