I can never have enough salad recipes. I think I got this one from NancysKitchen. Ingredients:
2 sm. yellow squash |
1 sm. zucchini squash |
1 med. onion |
1 bell pepper |
1/2 c. apple cider vinegar |
1/3 t. sugar |
2 tbs. oil |
1 tsp. celery seed |
Directions:
1. Salt and pepper to taste 2. Slice first 4 ingredients in thin slices. 3. Mix the last 5 ingredients and pour over vegetables. 4. Marinate 12-24 hours. 5. Keeps 1 week to 10 days. 6. Serves 6-8. |
