A 97 calorie, 1g fat and 1g carbohydrate internet find. It can be served on salad greens as well. I put 3 minutes in the cook time for cooking the shrimp unless you do what I do on occaision and buy the precooked ones. Ingredients:
1/4 cup oil |
1/2teaspoon minced garlic |
1 tablespoon dry mustard |
1/2 cup lemon juice |
salt and pepper to taste |
1 tablespoon red wine vinegar |
1 bay leaf |
dash cayenne pepper |
2 tablespoons chopped fresh parsley |
1 small red onion thinly sliced |
2 tablespoons capers drained |
2 pounds cooked shrimp, peeled |
Directions:
1. Use a small bowl, and combine the oil garlic, dry mustard, lemon juice, salt, pepper, vinegar, bay leaf, and cayenne pepper. 2. Combine well. Stir in the parsley, red onion, and capers, and add the shrimp, tossing until well coated, and refrigerate for 2 hours or overnight. 3. Drain the marinade, remove the bay leaf, and serve the shrimp with the onion, parsley, and capers. |
