A very pretty addition to any summer meal. Not the usual vegetable combination. Recipe and photo from Great Grilling 2002 Ingredients:
1 large zucchini, thinly slice |
1 lrg summer squash, quartered |
1 carrot, peeled and thinly sliced |
1/4 c very thinly sliced red onion, separated into rings |
4 radishes, thinly sliced |
2/3 c purchased greek vinaigrette dressing |
Directions:
1. In a large bowl combine all ingredients; toss to combine 2. Cover and refrigerate 4 hours or overnight before serving |
