Marinated Pineapple

This is great when you want to put a spin on serving fruit. You can make it with the liqueur for the adults and the orange juice for the kiddies.
Ingredients:
2 fresh pineapples, peeled,cored and cut into bite-sized chunks.
1 cup sugar
1/2 cup water
1/2 cup orange liqueur or orange juice
1/2 cup lime juice
1 tbs grated orange peel
Directions:
1. Place pineapple in large heatproof bowl.
2. In small saucepan, combine sugar and water.
3. Bring to a boil over high heat, stirring occasionally; cook 1 minute
4. Stir in liquer, lime juice and peel.
5. Pour over pineapple toss to mix
6. Refrigerate covered, 1-2 hours,stirring occasionally.
7. Serve cold with wooden picks.
8. VARIATION: Six cups of assorted fruit can be substituted for the pineapple, such as strawberries, grapes and orange segments.
