Marinated North African Olives |

A great beginning, middle or end to any African Meal. Ingredients:
1 teaspoon whole cumin seed |
1 tablespoon cracked coriander seed |
1 tablespoon red pepper flakes |
2 tablespoons mint, freshly chopped |
1 lemon, zest of |
1 lemon, juice of |
1/2 teaspoon black peppercorns |
1 lb east african variety olive |
Directions:
1. combine everything in a glass jar. 2. add the olives and toss to coat. 3. refrigerate for 3 days. 4. lasts for 3 weeks in the refrigerator. |
