Ingredients:
1 1/2 pounds fresh mushrooms |
1/4 cup finely chopped celery |
2 cloves garlic, minced |
1/4 cup butter or margarine, melted |
1/4 cup water |
1 cup vinegar |
1 cup olive oil |
1/4 cup lemon juice |
2 tablespoons chopped fresh parsley |
2 bay leaves |
1 teaspoon coarsely ground black pepper |
1/4 teaspoon dried whole oregano |
Directions:
1. Clean mushrooms with damp paper towels. Combine mushrooms, celery, garlic, butter, and water in a large skillet; bring to a boil. Reduce heat; cover and simmer 5 minutes. Add remaining ingredients, stirring well. Cover and simmer 3 minutes. Let cool. Marinate in refrigerator several hours or overnight. Remove mushrooms from marinade before serving. |
