Marinated mushrooms are so easy to make and taste better than store-bought. Sliced marinated mushrooms add texture and tang to all sorts of sandwich fillings. They make a great appetizer. My husband eats a whole batch as a snack. Ingredients:
1 lb small button mushrooms |
6 t. extra-virgin olive oil |
juice of 1 lemon, add water to make 1/2 c. |
3 large garlic cloves, peeled and sliced |
4 fresh thyme sprigs |
2 fresh sage leaves |
1 bay leaf |
1/8 tsp hot red pepper flakes |
a few black peppercorns |
1 tsp salt |
3 t. balsamic vinegar |
Directions:
1. Clean mushrooms and trim stems. 2. Heat 3 T. olive oil in a large saute pan. 3. Add mushrooms and saute over low heat until tender. Transfer to a bowl. 4. Place remaining olive oil, lemon juice, garlic, herbs, peppercorns, salt, and pepper flakes in saute pan. 5. Simmer for 5 min. 6. Pour over mushrooms. 7. Stir in balsamic vinegar. 8. Let mushrooms cool in marinade. 9. Cover and refrigerate over night. 10. Bring to room temperature before serving. |
