Ingredients:
2 lbs fresh mushrooms |
2 garlic cloves |
1 cup red wine vinegar |
1 cup water |
1/2 cup olive oil |
1/2 cup vegetable oil |
1 bay leaf |
1 teaspoon salt |
1/2 teaspoon dried thyme |
12 whole black peppercorns |
fresh parsley |
Directions:
1. Clean mushrooms and set aside. Flatten garlic and remove peel. 2. Combine all ingredients, except mushrooms and parsley in a dutch oven. Bring to a boil, then reduce heat and simmer 5 minutes. Add mushrroms and simmer uncovered for 10 minutes. 3. Remove from heat and let stand until slightly cool. Transfer mushrooms and marinade to a storage container. Cover and refrigerate until ready to serve. 4. Before serving, remove mushrooms from marinade and place in serving dish. GArnish with fresh parsley. |
