A delicious dish to serve with a tossed salad during the summer. In the winter I don't slice the mushrooms. I leave them whole and serve as an appetizer. Plan on making them at least 3 days in advance. Cooking time includes marinating time. Ingredients:
4 lbs fresh mushrooms, sliced |
1/4 cup salt |
1/2 teaspoon white pepper |
1/4 teaspoon black pepper |
1/4 teaspoon dried oregano |
2 1/2 cups sugar |
1/4 cup accent seasoning |
1/8 teaspoon crushed red pepper flakes |
2 garlic cloves, crushed |
2 cups red wine vinegar |
1 1/2 cups salad oil |
1 medium red onion, chopped |
Directions:
1. Combine all ingredients in a large bowl. Cover and refrigerate for 3 days. Stirring a few times a day. |
