Marinated Mushrooms

A delicious dish to serve with a tossed salad during the summer. In the winter I don't slice the mushrooms. I leave them whole and serve as an appetizer. Plan on making them at least 3 days in advance. Cooking time includes marinating time.
Ingredients:
4 lbs fresh mushrooms, sliced
1/4 cup salt
1/2 teaspoon white pepper
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
2 1/2 cups sugar
1/4 cup accent seasoning
1/8 teaspoon crushed red pepper flakes
2 garlic cloves, crushed
2 cups red wine vinegar
1 1/2 cups salad oil
1 medium red onion, chopped
Directions:
1. Combine all ingredients in a large bowl. Cover and refrigerate for 3 days. Stirring a few times a day.
