A great addition to your hors d'oeuvre platter for your next cookout. From Pampered Chef. Ingredients:
2 lbs fresh mushrooms (medium, 50-60) |
2 cloves garlic |
1 cup red wine vinegar |
1 cup water |
1/2 cup olive oil |
1/2 cup vegetable oil |
1 bay leaf |
1 teaspoon salt |
1/2 teaspoon dried thyme leaves |
12 whole black peppercorns |
Directions:
1. Clean mushrooms and set aside. 2. Crush garlic. 3. For marinade, combine all ingredients in Dutch oven. 4. Bring to a boil; reduce heat and simmer 5 minutes. 5. Add mushrooms; simmer,uncovered, 10 minutes. 6. Remove from heat. 7. Let stand until cooled slightly. 8. Transfer mushrooms and marinade to container; cover and refrigerate until ready to serve. 9. To serve, drain marinade from mushrooms. 10. Transfer mushrooms to serving dish. |
